We created this recipe for an Asian-inspired dinner party and served the delicious savoury cocktail during aperitif with sushi. Inspired by the classic martini, this drink has the perfect umami balance and will impress your guests by it’s complexity and unique taste.
You will need a sous vide machine to complete the process. If you are not familiar with a sous vide machine it doesn’t only helps creating great flavours for cocktails, it will also allow you to try new techniques to achieve perfectly cooked meat. It’s a great investment!
- 30ml gin
- 30ml wasabi vodka
- 20ml white vermouth
- 1 tsp sea weed solution
Stir all ingredients in a mixing glass with ice. Serve with 3 small pieces of Sushi.
For the wasabi vodka:
Dry shake half a tsp of wasabi with 200ml of vodka. Strain and bottle.
Seaweed solution (makes 250ml):
80gr wake seaweed
400ml white vermouth
Place the wake and the white vermouth in a vac bag and seal. Set the water bath of a sous vide machine to 55°C. Leave for 45 minutes then strain and bottle.
